Wine making: De-stemming, so pressing of the grapes, fermentation and maceration on the skins for approx. 10 days. During the maceration the must is pumped over in the dèlestage way to extract the colour and varietal aromas. After two decantation to eliminate the solid parts come the malolactic fermentation. Then the wine is matured in wooden casks of different status for 24/30 months, with weekly topping-up, tastings and analyses to make sure the wine is developing correctly

Ageing: Depending on the vintage, Barolo can be kept for several decades; store bottles lying down in a dark, damp-free environment at cool temperature. It can be at its top 7 years after vintage

This Zinfandel is a luscious, smooth, full-bodied wine with aromas of blackberry, bramble berry and Allspice. Deliciously mouth-filling, the wine opens up to sweet vanilla and toasty oak flavors, then follows with a concentrated core of well-balanced acidity, soft, but firm tannins and a lingering finish on the palate.
Concrete Old Vine Zinfandel is an excellent partner to spicy BBQ, zesty pasta and pizza, or juicy burgers.

The Carinalli Vineyard located outside of the town of Sebastapol is positioned for Pinot Noir excellence.
2012 was an almost perfect year for Pinot Noir and the fruit came in absolutely beautiful. We carefully choose the blocks to ferment the micro-lots to isolate the individual flavors and aromas. This wine was mainly fermented in 500 liter French Oak Puncheons with hand punch downs. A portion was aged in stainless and the balance (majority) was aged in the same puncheons the wine was fermented in that very year. The wine was never racked or filtered, and rested on gross lees the entire aging period.
Elegant and soft. Bright aromatics. Rosey, strawberry and hints of tobacco pair delightfully with bright acidity. The tannins are subtle but noticeable as the wine opens up. Slightly darker fruit elements show up as the wine opens up on the palate – perfectly ripe black cherry. The finish seems to linger for minutes. Ready to drink now.
Dark in the glass, the wine fades from a deep red/purple, almost black at its inner core to a bright pomegranate rim. On the nose bright red berry, fig, licorice, sage, and oak accents. The wine is rich and full of character with blackberry, licorice, spice, and earth notes intertwined with soft oak flavors.
Ripe black fruit aromas pour from the glass followed by notes of spice, cocoa, black tea and hibiscus. The full bodied palate is dense with the flavors of cocoa, blackberry and brown sugar, carried on smooth tannins and supple texture. The flavors of tea, mocha and cherries carry through on the long finish.
Pale pink in color, our 2015 SIP Rosé is crafted in the French style and is dry and very food friendly. The wine has vibrant aromas of strawberry, violets and candy apple, while the palate offers up crisp acidity and flavors of red plum, jammy raspberry and sweet spice. This wine pairs well with everything!
Focused aromas of blackberry, anise and dried rose arise from this dark concentrated wine, followed by fragrances of caramelized sugar, black cassis and black tea. Layered and dense, the palate seduces with baking spice, black fruit, dried apricot, and mocha. The palate is carried on a bed of fine grained tannin, and flavors of fruit, spice and mocha carry through the finish.
